Friday we hosted our 6th annual friendsgiving at our house. I went a little overboard on invites this year so we ended up having almost 40 people and that is not including the kids! Thank God we decided to cook 2 turkeys and a ham! We decided to brine one of the turkey's this year, and Mike deep fried it since it's our tradition. It was SO SO good. I wish our deep fryer was larger so we could fit a bigger turkey! Next year maybe we'll just deep fry both, one after the other, since they only take an hour for a 19lb turkey :) We slow roasted the other over night and it turned out quite yummy as well. All of our guests did an incredible job of providing us with the most delicious side dishes we've had to date. Let's see if I can remember all that we had - cornbread and sausage stuffing, mashed potatoes (yay the person that said they'd bring potatoes didn't flake this year!), pumpkin and sage risotto, green bean casserole, creamed corn, creamed onions, creamed spinach, broccoli casserole, sweet potatoes with candied pecans, 3 kinds of cranberries, rolls... I think that was pretty much it for dinner. Then we had a whole other table of yummy desserts! The good news for us is that almost everything went so we didn't end up with a years worth of left overs! Just enough turkey and ham to eat for another meal. We also managed to get all of the cleanup done the same night so Saturday was painless. GREAT friendsgiving as usual :)
